One Pot Pasta Recipe with Spinach and Tomatoes
This recipe can be made quickly and affordably which is why it is one of my favorites! Not to mention, it is also delicious! Once you make this recipe, you will probably keep it as a go-to recipe on days when you want something that looks like it took hours to cook, but actually can be whipped up in less than 30 minutes!
3 tbs Olive Oil
1 large chopped onion
6 cloves garlic, coarsely chopped
1 (15 ounce) can unsalted petite diced tomatoes, undrained
1 1/2 cups unsalted chicken stock
1/2 tsp dried oregano
8 ounces whole-grain spaghetti or linguine
1/2 tsp salt
5 cups fresh spinach
1 ounce Parmesan cheese, grated (about 1/4 cup)
Preparation:
Heat a Dutch oven or large saucepan over medium heat. Add oil and coat the bottom of the pan. Add onion and garlic and saute for about 2 minutes or when onion gets soft. Add tomatoes, stock, oregano, pasta, in that order. Bring to a boil while stirring noodles to submerge in liquid. Cover and reduce heat to low and cook for 7 minutes or until pasta is done. Toss the salt in. Then add spinach in batches until it wilts. Remove pasta from heat, let stand for 5 minutes and then stir in Parmesan cheese! And enjoy a delicious pasta recipe! This should serve about 4-5 depending on appetite and other dishes prepared with it! I am sure it can be doubled to serve more.
