Simple and Quick Chicken Mole
This chicken mole recipe is simple and delicious and according to my husband, on par with restaurant served mole. A mole is a sauce served with meat and rice originating in Mexico. Pueblo and Oaxaca usually take the credit for the invention of the mole sauce. Although there are many different types of moles with various ingredients, this particular mole is quick, simple and can be made with whatever is in your pantry.
Ingredients:2 lbs bone in, skin on chicken thighs
1/4 tsp salt
1/2 tsp ground black pepper
4 tbs olive oil
7 cloves garlic, minced
1 tbs chili powder
1 tsp cumin
1 tsp cinnamon
1 - 14 ounce can tomato sauce
1 cup reduced sodium chicken broth
1 bar Herseys milk chocolate
toasted sesame seeds for garnish
Season chicken with salt and pepper. Heat 2 tbs oil in large skillet over medium heat. Add chicken and cook until browned on both sides. Transfer chicken to a plate.
Add the rest of the oil, garlic, chili powder, cumin, cinnamon and salt to the pan. Cook, stirring until fragrant for about 30 seconds. Add tomato sauce, broth, chocolate bar, stir to combine. Bring to a simmer and return the chicken to the pan. Simmer on low heat the sauce and chicken for 30 minutes and you have a delicious chicken mole! Serve this easy chicken mole over rice. Enjoy!
