Healthy Hamburger Soup Recipe

 

On those cooler fall days, one of my favorite soups to whip up is Hamburger Soup!  This is a savory, one-pot dish that can be made from your kitchen staples plus a few extra ingredients that can be picked up at your local specialty shop (Whole Foods).  One thing I absolutely love about this dish is the hint of hamburger that comes out with the ketchup that is added.  You really do feel as though you are eating a hamburger, just in soup form.  Since I try and limit the amount of red meat I do eat, I use turkey instead.  But if you don't mind eating red meat, then you can absolutely use ground beef instead of the ground turkey I use in mine. 


I always want to make sure I am using meat that is grass-fed, with no added antibiotics, fillers, or preservatives.  I also do not use the beef bullion, but instead, use Organic Better Than Boullion Roasted Beef Base which can be found at Whole Foods.  



I also try to incorporate as many organic ingredients as I can so that I reduce my toxic load (less pesticide-laden food is better for you).  But what I absolutely love about this dish is the savory, sweetness that pairs so well in my mouth with the tomatoes, carrots, celery, and corn!  




So here goes my recipe!

Ingredients:

1 lb ground turkey

2 tsp garlic, minced

1 c carrots, chopped

1 c celery, chopped

1 large onion, chopped

5 tsp Better Than Boullion Roasted Beef Base

6 c water

15 oz can tomato sauce

32 oz can diced tomatoes

12-ounce package frozen corn kernels

1 tsp dried basil

4 tbs ketchup

Directions:

Brown turkey with garlic.   Combine ingredients in a large stockpot.  Bring to a boil.  Reduce heat and simmer 1 - 1/2 hours.  

Enjoy this delicious and nutritious meal!
