Healthy Cabbage Soup Recipe
Cabbage is both a delicious and nutritious vegetable packed with vitamins and minerals that are both healing and supportive to your wellness. Although cabbage soup has been known to promote weight loss, it is also an anti-cancer food with potent health benefits. I would certainly try to add cabbage to your diet as much as you can. Soup is a great way to pack a bunch of different healing foods into one great meal! You can add proteins, vegetables, and spices together in one dish that complement both the flavor of the food and the nutritional composition of the dish. Although my initial recipe just used cabbage in the soup, I decided that for a heartier flavor and more filling meal, it is best to add ground turkey or beef.
Ingredient:
3 tbs olive oil
1 yellow onion, chopped
3-4 garlic cloves, minced
1 lb ground turkey
8 cups low sodium chicken broth
1 tsp kosher salt
1/2 tsp dried thyme
1/2 tsp black pepper
1/2 head cabbage chopped into 1/2 inch chunks
4 carrots peeled and chopped
3 stalks celery
1 15 ounce can diced tomatoes
1. In a large pot add the olive oil over medium heat then add the onions, ground turkey, and garlic. Cook until the onions are translucent and the turkey is cooked through.
2. Add in the broth, salt, pepper, thyme, cabbage, carrots, celery, and tomatoes and simmer for 30 minutes.
