
Do you ever find yourself rushing to make breakfast for yourself and your kids while trying to prep school lunches, get your kids ready for school, all the while making sure no one is having a meltdown? My mornings are usually chaotic and stressful but I have found a few convenient ways to reduce my stress in the early hours of the day with a little prep and planning. One of the ways I reduce morning stress is to make sure everyone's outfits for the day are ready: shirts, pants, and socks are ready to go. I usually plan this the night before. If your daughter always gives you morning outfit trouble, have her plan her outfit the night before. Although I usually try and prep lunches the night before, my evenings are so chaotic that I usually am too tired at the end of the day to prepare three nutritious lunches. But, if you want your mornings to be completely relaxing, try not to skip this step. Prepping lunches the night before drastically reduces your morning crazy. But what I really LOVE to do, is have breakfast prepared the night before. By not having to prep breakfast, stress is drastically reduced and kids are happily eating a healthy, delicious, and nutritious meal. Now, by no means am I opposed to cereal, toast, or something quick and easy, but I have to give brownie points to these delicious, healthy, and nutritious breakfast cookies you can make ahead on the weekend, freeze and reheat for a delicious and quick meal. So here goes...
Ingredients
1/2 cup coconut oil, softened
15 drops stevia
1 egg beaten
1 ripe banana, mashed
2 1/4 c rolled oats
1 tsp baking powder
1/2 cup chocolate chips
1/4 cup shredded coconut
1/4 cup almonds, chopped
1/4 tsp kosher salt
Instructions:
1. Preheat oven to 350 degrees.
2. Line a baking sheet with parchment paper.
3. Mash banana in a large bowl, then add in one beaten egg. Add in the stevia, coconut oil, rolled oats, baking powder, and salt. Stir to combine
4. Add in the coconut, almond, and chocolate chips and stir to incorporate.
5. Using a cookie scooper, scoop out the mixture and form into balls and place on cooking sheet 1 inch apart.
6. Bake for 15 minutes or until golden brown. Cool for 3 minutes and then cookies are ready to enjoy!
