Delicious and Easy Blueberry Muffin Recipe

Did you ever find yourself with a container of blueberries that were too soft to enjoy but not spoiled yet?  The kids don't want to eat them and you are thinking where are my fresh blueberries?  You feel bad that you spent close to eight dollars on these organic blueberries and don't want to waste them...so what is a mom to do??  There are many recipes that call for blueberries that are simple, easy and nutritious!  They range from cookies, to scones, to pies and muffins.  I decided that today I would bake blueberry muffins and I was thrilled that they turned out light and fluffy with just the right amount of blueberries to suit my taste!  I also combined cooking and math to teach my kids about fractions and proportion.  How many 1/4 cups of flour do you need to make 1 cup?  It's not every day that you find a recipe that you love and your kids love too!  But today I had hit the jackpot and these muffins were devoured by all of us!  Blueberries have many health benefits and I try and include them in whatever recipes I can!  Blueberry cobbler is absolutely delicious!  But for today, we just felt like muffins and it turned out to be a great choice!  So before I made my muffins, I made sure all the kids were on board with spending some time in the kitchen...and they were all eager to start baking.  Kids love to experiment in the kitchen and giving them some hands on experience is really important for their growth and development.  Cooking is what I term a life skill..along with sewing, knitting, crochet, gardening...you will always use those skills and you don't want your child relying on take out as an adult.  When you cook your own food, you control the ingredients.  For my sugar and four, I used an organic brand.  I also put in organic blueberries, fresh butter, pure vanilla extract, my special healthy baking powder, sea salt, and my special high oleic sunflower oil.  Since I am very sensitive to ingredients, I have to be super careful with all the ingredients I use in my cooking.  Just indulging in a little more chocolate the day before had me waking up at 1 AM in the morning with a migraine developing.  When you cook your own food, you control all the ingredients.  It is so easy to pick up a store bought brand of blueberry muffins...but just take a look at the ingredients and your quickly realize there's a lot more in your muffins that you bargained for, from preservatives to dyes to dough conditioners.  Anyway, here is the most delicious, light and fluffy blueberry muffin recipe!!

          Ingredients:

          2 eggs

          3/4 cup sugar

          3/4 cup butter, melted

          1/4 cup vegetable oil

          1/2 cup water

          1 tsp vanilla

          1 3/4 cup all-purpose flour

          2 tsp baking powder

          1/2 tsp salt

          1 1/4 cup fresh blueberries

          2 tsp sugar for tops

          Preheat oven to 375F or 190C.

          Whisk together all the wet ingredients and set aside.

          Whisk together the dry ingredients.

          Whisk together the dry ingredients into the wet ingredients slowly.  Then, fold in the blueberries.

           Line a muffin tin with muffin papers and place 1 ice cream scoop of batter into the muffin paper.

 Add about 3-4 blueberries to the top of each muffin and add a sprinkling of brown sugar to the     top.

          Bake at 375 degrees for 25 minutes.  Let muffins cool for 5 minutes before eating!
