Caribbean Chicken Recipe

 

As a young girl, my family and I traveled yearly to the Caribbean.  We either went there or to the Philippines to visit my mom's family.  My love of the ocean and the islands started young!  Seashells, starfish, and corals have always fascinated me, along with the myriad of fish to be found in the ocean.  One thing I also loved was the variety of foods and cuisines the islands had to offer.  A lot of island food is cooked with coconut milk as coconuts are a readily available food source.  This particular chicken recipe uses delicious curry powder, coconut milk, cinnamon, and crushed tomatoes.  Between all those spices and ingredients, you have a powerhouse nutrient-dense dish!  This particular dish is so simple you can easily prepare it any night of the week and it doesn't take up a lot of time.  I would say if you have all the ingredients on-hand, you can pretty much whip up this dish in about 30 minutes!  So here goes for this simple, easy, but very tasty Caribbean chicken dish!

Ingredients:

2 tbsp Olive Oil

Coarse salt to taste

Ground black pepper to taste

1 small onion, finely chopped

2 cloves garlic, finely choppd

1/2 cup coconut milk

1 can (14 ounces) crushed tomatoes

2 pinches ground cinnamon

4 boneless free-range chicken breast halves, cut into chunks

2 tbsp curry powder

Cilantro leaves, coarsely chopped for garnish

Instructions:

1.  Heat olive oil in a pan over medium heat.

2.  Add onions and garlic, stir until golden brown.

3. Add tomatoes, chicken, and sprinkle curry powder.

4.  Season with salt and pepper.

5.  Reduce heat to low, stirring until the mixture has thickened and chicken is cooked through, about 15-25 minutes.

6.  Add coconut milk and stir until well combined, cook for 6 more minutes.

7.  Sprinkle with cinnamon and garnish with cilantro.
