Cowboy Carviar Recipe

 

It's Friday night and you want to make a side dish to go with that fried chicken you purchased...or on a healthier note, that organic chicken you purchased from Whole Foods.  Cowboy caviar is my go-to dish to pair with chicken, fish, or any other protein.  This dish can be prepared in 15 minutes and makes a great side dish for any picnic, potluck, or party.  When my son was taking a kid cooking class, he had made this delicious dish that I gobbled up right after he came out of his cooking class.  This dish made such an impression on me similar to the time we visited my husband's aunt in San Francisco and she made this delicious enchilada casserole.  That Enchilada Casserole dish I will save for another post...yum yum!  But here is this delicious Southwestern dish that is sure to please!

Ingredients:

3 Roma tomatoes (seeds removed, diced)

2 ripe avocadoes, diced

1/3 cup red onion, diced

15 oz black beans, rinsed and drained

15 oz kidney beans, rinsed and drained

1 1/2 cups frozen sweet corn

1 bell pepper, diced

1/3 cup cilantro, finely chopped (more for taste)

Dressing:

1/4 c olive oil

1/4 c balsamic vinegar

1/4 tsp garlic powder

Combine tomatoes, avocado, onion, black beans, kidney beans, corn, pepper, and cilantro in a bowl.  Toss/stir well to combine.

In another bowl, stir together the dressing.  Mix dressing with the salad, refrigerate, and you have a delicious meal!  Enjoy!
