Delicious and Healthy Breakfast Cookie Recipe
Each and every morning I'm in a mad rush to figure out breakfast for my kids, rushing through my fridge and pantry to figure out whether I'll fry some eggs or boil water for oatmeal. Sometimes, it's that organic healthy cereal I purchased from Whole Foods...no artificial flavors or colors so it is a win with me. But, on a more pleasant side, I love to actually make something from scratch that I can give my kids for breakfast. Delicious blueberry muffins made from scratch? Pancakes made with the organic flour I have in my pantry? Breakfast cookies usually take the cake for both deliciousness and nutrition and are easy to prepare the night before so I don't have to scramble through cupboards for food ideas. These particular cookies are made with healthy rolled oats, bananas, almonds, coconut, and chocolate chips. Coconut oil is used for a delicious almond joy flavor that pairs well with the chocolate chips added to the mix. Instead of sugar, stevia is used as a healthy alternative. I'd have to say, out of the many breakfast cookie ideas I have made, these cookies have been by far the tastiest and in my book, get an A+ for health! Each cookie is about 101 kcal, with 9 grams carbohydrates, 2 grams protein, 7 grams fat and 7 mg cholesterol. These cookies contain only 32 mg sodium and 3 grams of sugar while coming in strong with healthy doses of potassium, vitamin A and calcium.
Ingredients:
1/2 cup coconut oil
15 drops stevia
1 egg beaten
1 ripe banana, mashed
2 1/4 cup rolled oats
1 tsp baking powder
1/3 cup chocolate chips
1/4 cup shredded coconut
1/4 cup almonds, chopped
1/4 tsp kosher salt
Instructions:
1. Preheat oven to 350 degrees.
2. Line a rimmed baking sheet with parchment paper and set aside.
3. Mash banana in a large bowl using the back of your fork, add beaten egg, stevia, coconut oil, rolled oats, baking powder, and salt. Mix until everything is combined.
4. Add in the coconut, almond, and chocolate chips and gently stir until everything is incorporated.
5. Scoop one tablespoon of batter and shape it into a cookie. Place on baking sheet.
6. Bake for 15 minutes or until golden brown and cooked through. Cool and enjoy!!
