Easy Pico de Gallo Recipe
Mexico has always had a special allure for me. The flavors of indigenous cultures are particularly enticing and hold a special place in my heart. But there is one salsa recipe that has always been a personal favorite, whether I am making breakfast tortillas, homemade corn chips, or cheese quesadillas. My personal favorite has always been Pico de Gallo. In my twenties and thirties, I would frequent fast food giants Baja Fresh and Chipotle. The Pico de Gallo was my choice with their fish tacos or Mexican rice bowls. I would always pile on the Pico de Gallo for that burst of tomato, cilantro, and jalapeno pepper flavor and it definitely never was a disappointment. As I got older and started focusing more on home cooking and recreating the dishes in my home, I began to experiment with different recipes in my kitchen. Making this salsa from scratch is so easy and you will be so ecstatic that it is so easy to make right in your own kitchen.
Now there are two ways to make this dish. You can make this dish by manually chopping the tomatoes, onion, cilantro, and jalapeno pepper OR you can blend it all up in a few seconds in the food processor. Either way, you will have a delicious salsa. If you decide to make this manually and without a food processor, you will get a chunkier salsa with individual bites of each vegetable and pepper. If you go the food processor route, your salsa will be more incorporated and less chunky. Either way, the flavor will be great! I use the food processor as it saves me a ton of time and I can whip this up in less than 5 minutes. Since I am short on time on most days, this is the route I go. A food processor has been a time saver for so many of my dishes and I am so glad I decided to have one in my kitchen.
So, if you have a few minutes and want some homemade salsa...here is the recipe...
Ingredients:
4 Roma tomatoes, deseeded and diced
1 white onion, finely diced
1 bunch cilantro, finely chopped
1 jalapeno pepper, finely chopped
1 lime, juiced
Instructions:
Finely chop all the ingredients and place in a bowl OR place all ingredients except the lime in the food processor and pulse until chunky but not pureed. Place in a bowl and add lime. Stir in the lime and enjoy! This will, hands down, be one of the best Pico De Gallo salsas you eat! It is bursting with deliciousness! Enjoy!
