Easy Cranberry Crumble Recipe

After the holiday season, I always grab several bags of fresh cranberries to freeze in my freezer.  The cranberry season only runs for a few months in North America, from September to around January and then the cranberries are gone for several months.  Cranberries are a superfood and have many amazing health benefits...plus their tart flavor enlivens any meal.  I created this crumble without any sweetener added to the cranberries themselves.  The entire dish is sweetened by the topping which lends a nice tart twist to the cranberry dish.  The oats add crispiness and I use brown sugar to create a chewier topping.  This dish is perfect for bringing to a holiday potluck or just having around as an after-school snack for the kids!

Cranberries are an amazing superfood!  Not only are they great for your bladder by helping to prevent UTIs...think cranberry supplements, but they are great for improving cholesterol and lowering blood pressure.  Cranberries have high nutrient and antioxidant properties and assist in reducing inflammation in our bodies.  Cranberries contain high amounts of anthocyanins and flavanols, antioxidants that give cranberries their dark hue.  They reduce the risk of certain chronic diseases by lowering inflammation in our bodies.

So, now that I've gone over some of the health benefits of cranberries, let's start using them in our food today!

First, you need to gather all your ingredients...

Then, rinse your cranberries with cold water.

Place cranberries in a glass Pyrex dish 7x11x2 inches.

Prepare your crumble topping and sprinkle over the cranberries.  The crumble will add the majority of the flavor to your cranberries and eliminate some of the sour taste.  Since I don't sweeten the cranberries, this is where most of the flavor comes from.

Then bake in the oven at 350 degrees for 45 minutes and there you have a delicious cranberry crumble!  Just keep an eye on it as it is baking since you don't want the crust to burn.  After about 30 minutes, start peeking in to make sure the crumble topping isn't burning.

Ingredients:

1 12-ounce bag of cranberries
1/2 cup flour
3/4 cup oats
1/2 cup sugar
pinch cinnamon
1 stick of butter, melted

Directions:
  1. Preheat oven to 350 degrees.
  2. Place rinsed cranberries in glass Pyrex.
  3. In a separate bowl, combine four, oats, sugar, cinnamon, and melted butter until the crumble forms and it all comes together.
  4. Sprinkle the crumble topping over the cranberries.
  5. Bake at 350 degrees for 45 minutes and check at 30 minutes.
Enjoy this delicious and healthy crumble.  With frozen cranberries, you can enjoy this cranberry year-round!  It tastes amazing with ice cream or whipped cream!  Enjoy!
