 One Bowl French Coconut Pie

This has to be the easiest pie you will ever make and it is so delicious!  It takes 5 minutes to put together and 1 hour to bake.  I also love that it uses unsweetened flaked coconut and tastes like the Almond Joy candy bar.  Although this is not the healthiest pie since it contains a lot of sugar, you can make it healthier by modifying the amount of sugar according to your taste.  I used 1 1/4 cup of coconut sugar which is better than regular white sugar and I didn't notice a difference in taste.  

Coconut has various health benefits. Dry coconut is rich in nutrients and minerals such as manganese, copper, and selenium.  These minerals are important in various bodily functions including bone health, immune support, and antioxidant defense.  Dry coconut is also a good source of fiber and aids in digestion and reduces the risk of intestinal disease.  It also contains healthy fats that improve blood cholesterol levels.  There are always reason to add shredded coconut to your cooking.  

This pie contains eggs, coconut sugar, flaked coconut, butter, white vinegar, vanilla extract, and a pinch of salt.  Just mix everything together and bake in a 9-inch premade pie shell.  It's as easy as 1-2-3.  

Although regular pie shells work fine, I like to get the gluten-free pie from Trader Joe's.  Whole Foods also has an organic pie shell which also works well.

Ingredients:

3 whole Eggs, beaten

1 1/4 cup coconut sugar

1 cup flaked coconut

1 stick butter, melted

1 tablespoon white vinegar

1 tsp vanilla extract

1 pinch salt

1 whole 9-inch Uncooked Pie Shell

Directions:

Mix ingredients together in one big bowl and pour into a pie shell.  Bake at 350 degrees F for 1 hour.
