One Bowl French Coconut Pie
Coconut has various health benefits. Dry coconut is rich in nutrients and minerals such as manganese, copper, and selenium. These minerals are important in various bodily functions including bone health, immune support, and antioxidant defense. Dry coconut is also a good source of fiber and aids in digestion and reduces the risk of intestinal disease. It also contains healthy fats that improve blood cholesterol levels. There are always reason to add shredded coconut to your cooking.
This pie contains eggs, coconut sugar, flaked coconut, butter, white vinegar, vanilla extract, and a pinch of salt. Just mix everything together and bake in a 9-inch premade pie shell. It's as easy as 1-2-3.
Although regular pie shells work fine, I like to get the gluten-free pie from Trader Joe's. Whole Foods also has an organic pie shell which also works well.
Ingredients:
3 whole Eggs, beaten
1 1/4 cup coconut sugar
1 cup flaked coconut
1 stick butter, melted
1 tablespoon white vinegar
1 tsp vanilla extract
1 pinch salt
1 whole 9-inch Uncooked Pie Shell
Directions:
Mix ingredients together in one big bowl and pour into a pie shell. Bake at 350 degrees F for 1 hour.
